We have received a request from one of our recent guests with a gluten and dairy intolerance to share our recipes for some of her favourite things she enjoyed whilst staying here. Of course we are happy to oblige so here are our receipes for a gluten and dairy free cake and loaf of bread.
3 medium clementines
6 large eggs
225 gs castor sugar
250g ground almonds
1 tsp gluten free baking powder
Place the clementines in cold water to cover them, bring to the boil and then simmer for 2 hours. Drain, cool, cut in half and remove pips. Blitz them in a food processor.
Grease (using Pure sunflower spread) and double line an 8” tin.
Beat eggs, sugar, almonds and baking powder together and then beat in blitzed clementines. Bake for 1 hour in medium oven – check half waay through and cover with foil or greaseproof paper if top is beginning to catch.
Gluten & Dairy Free Bread
210 ml warm water
2 tsp dried yeast
3 tblsp sunflower oil
1 tblsp cidar vinegar
1 egg & 1 egg white
280 g gluten free bread flour
2 tsp xanthum gum
Half tsp salt
Dissolve yeast in warm water. Let it stand until creamy (approx 10 minutes)
Add oil, vinegar, egg and egg white to yeast.
Place flour, gum and salt in a stand mixer with paddle blade on. Stir on low speed and gradually add the liquid. Once all added, turn up to medium speed and mix until smooth.
Grease a 900g loaf tin (21cmx11cm) with Pure. Pour in mixture and smoth the top. Cover with a clean tea towel and place in a warm place to rise (airing cupboard or by the Aga) for one hour. Once it has doubled in size bake for 45 minutes.
Remove from tin onto a cooking rack and cover with a clean tea towel until cool.
